My wife woke me up this morning with the sound of my electric filet knife. She was using it to cut the kernels off cobs of sweet corn for freezing. I found out that she and the neighbor lady had put up 75 packages of corn in just a few hours the day before and the electric filet knife was what made it possible. We have great tasting sweet corn all year from the freezer and the electric knife makes the task a lot easier.

8 cups sweet corn kernels
1 cup water
1 stick (1/4 lb) butter
1 tablespoon sugar
1 teaspoon salt
Bring to a boil, simmer for three minutes, cool, pack in Ziplock bags and freeze.
We usually put two or three cups in a one quart bag.

BD, I have relation from Manawa area and we must have a mutal friend/connection. We have the same recipe for sweet corn and do the same thing.

Nice having "fresh" sweet corn in January.
