I listened to a Public Radio report about this issue a couple days ago covered in pretty good detail. It seems the states have different standards as much because they measure different toxins and use different standards as anything. Best policy according to that report is to limit intake to a reasonable amount, and trim all belly and red meat from fillets. Put back older, mature trout and take home the smaller, younger fish for table fare.
