Black eggs? Is that good? Are there different colors?

Black eggs and white eggs.....the black eggs are ideal for making caviar.

Black eggs means the fish would have spawned this year, and perfect for caviar as jayman said, American Caviar which has a smooth and pleasant flavor with a clean and gentle aftertaste goes for about $20.00 an oz which makes that fish worth about 15,000 dollars! Although the finest I have ever had is belugia which comes from the caspian sea and goes for about $200.00 an oz!
Good Luck

I had Flying Fish Roe Sushi at Koreana's last week. It was good. Bright copper golden color, it pops when you crunch down on them. Yummy!

Is the Beluga a different strain of Sturgeon than our lake Sturgeon? And does one keep all thse eggs from that 158 lber? Or can they sell them? Is it caviar right from the fish, or do they have to go through some processing other than washing? How do you store them. Certainly, you wouldn't eat 58 lbs worth in a week or two!

Selling Lake sturgeon caviar is illegal. So the value is meaningless.

Why must people associate everything with a cost?

Haven't decided yet. Perhaps Tyee's favorite place on the east side of Bago. I'll know more after the Boat show. Why do you ask?

Sorry Shep can't make it, I have a limit of Perch waiting for me under the ice. The younguns have been gettin some biguns. Jayman is right it is illegal to sell Roe (fish eggs). I'm a salesman Jayman and everything in life has a price, It's a hell of a lot easier to convince the wife that I have the potential of bringing home 15 thousand dollars worth of caviar to her when I am justifying my sporting activities and new product (silly me)!
25 perch=50 fillets, [email protected] fries, bread and a mixer or 2 you do the math. thats a few perch dinners.
Good Luck
