What do they feed on when the baitfish have grown to big? Like a cisco, ect that has grown over 10 inches?

Big Bait.

I'm not sure they can grow to big. I've caught 25 inch walleyes with 8 inch perch in the guts. But usually during the fall winter months when the spring baitfish are full grown, most species will not be any bigger than say 4 to 6 inches in length. A lot depends on rather the baitfish is soft or spiny rayed as well, with spiny rayed species being a secondary choice. I'm thinking cisco's being a soft rayed specie, would be in real trouble from walleyes and other toothy preditors all their natural lives.
