Where on a 1760 DW would a person mount the shoot through to get a good reading at any speed. Where is the deadrise area located?

Deadrise is a measurement, not a location. You will need to position the transducer in the very rear of the hull interior back in the bilge. you can place the transducer port or starboard some, but remember that this is a high performance hull and very little is in the water when it's 'aired out'.
